4-5 lbs of chicken breasts or pork chops/tenderloin
1/2 gallon water (8 cups)
1/4 cup apple cider vinegar
1/2 cup kosher salt
1-2 tsp whole black peppercorns
2-3 sprig each of fresh rosemary & thyme
1 lemon halved
2 bay leaves
4 cloves garlic (crushed)
-Use room temperature water to dissolve your salt/sugar
-Add the rest of your ingredients to the dissolved into salt/sugar water mixture (If you used hot water, add ice as needed to get your brine liquid temperature below 40 degrees so you do not cook your meat!)
-Place your chicken breasts in an airtight bag or container and pour your brine mixture over your chicken breasts
-Allow your chicken to brine 2-4 hours and BE SURE TO RINSE YOUR CHICKEN BEFORE COOKING!
Why a Brine is Helpful:
-Lean proteins should be a staple in your diet and a brine is an extremely simple yet effective way to keep your meat like chicken moist and flavorful.
-Osmosis is the driving force behind the brine allowing for the exchange of the water in the meat for the fluid in the brine; the salt in the brine also changes the configuration of the proteins in the meat allowing the flavors of our brine to work its way in
