Baby Spinach or Spring Mix
Chopped Grilled Chicken Breast (Brined!)
Toasted Pecans: chop into bite size pieces and toast in a warm frying pan for ~1-2 minutes. Make sure you are continuously moving your pecans around, so they don’t burn!
Homemade Strawberry Balsamic Vinaigrette: 1/2c olive oil, 1/4c balsamic vinegar, 1 T honey, 1 T strawberry jam, 1/2 t salt, 1/4 t pepper, 1/4 t italian seasonings, ½ T lemon juice
Use your brined Chicken from the previous recipe (grilled chicken works as well)! Put as much greens in a large bowl as you would like. Add in your sliced strawberries, blueberries, toasted pecans and goat cheese. Top and toss with your salad dressing!
