Preheat oven to 350°
1 bunch of asparagus
¼ red onion
Salt and pepper
Wash and cut off the ends. Line a baking sheet with tin foil, and lay out your asparagus. Spray with olive oil and season with salt and pepper. Cook until tender.
6-8 Medium Yukon Gold Potatoes (~3 lbs.)
Wash and cut into wedges. Line a baking sheet with tin foil, spray with olive oil and lay out your potatoes. Cook your potatoes until brown on both side ~10-15 minutes/side. Once cooked, pour or brush (lighter option) your vinaigrette mixture over the top and mix together. Enjoy!
Vinaigrette for Herb Potatoes
¾ cup olive oil
3 tbsp lemon juice
1 tsp garlic powder
1 tsp Italian seasoning
salt and pepper to taste
While your asparagus and potatoes are cooking in the oven, you can start to prepare your fish.
Season your fish with salt, pepper and lemon pepper. Pan sear in coconut oil or butter until your fish is slightly brown and flaky. Brush with some of your vinaigrette for your herb potatoes.
